In this 4 hour class that you take over 2 sessions, you will learn how to make make, shape, bake, and store sourdough bread. After the second session, you will take home with you your own baked loaf of bread, plus the recipes to do it again yourself.
- Day 1: In this 2.5-hour session, you will learn how to make the dough from your starter (sign up separately for the starter-making class which is 1-week before this class).
- Chef Mark will demonstrate and you will mix, scale, and hand-kneed your dough
- You will learn about bulk fermentation and folding, hydration, and some other aspects of sourdough
- You will leave your dough at The Learning Kitchen at Chocolates and Tomatoes Farm to chill overnight.
- Day 2: In this 1.5 hour session, you will learn how shape, bake, cool, and store your dough.
- Chef Mark will show you how to and you will shape, bake, and cool your dough.
- Chef Mark will discuss storing your dough and give you more information about maintaining your starter and what you can do with starter discard (other than just throwing it away).
- Taste some sourdough treats made by Chef Mark.
- Take home what you make at the end of session 2, plus any leftover dough you have, and the recipes to do it again yourself.
No cooking experience necessary (Level 1 class).
We will have hot coffee and tea, and cold water available, Feel free to bring nonalcoholic beverages with you.
