Class Description:
It’s all Greek to us! Today we’re taking your taste buds to the Mediterranean with a traditional Greek lunch. Your guide is CCKC Head Instructor and Executive Chef Melissa Houston, who has travelled the globe cooking and teaching for over 30 years. Hailing from the West Coast, Melissa uses her wealth of culinary experience to put her own unique spin on regional and global cuisine that is both healthy and delicious. 

In this hands-on class, you'll learn the art of crafting authentic Mediterranean dishes that are fresh, seasonal and easy to create (and recreate at home!). We’ll start off with a traditional Jerusalem Salad of diced tomato, cucumber, red bell pepper and red onion with parsley, mint, lemon and garlic. This light side dish accompanies our gyro entree. Of course, we can’t host you for a Mediterranean class and not make hummus and Tzatziki. Chef Melissa will make this traditional chickpea and sesame spread with a spicy sambal chili condiment. Then we’re making Tzatziki, a Greek yogurt base with cucumbers, garlic, lemon juice and herbs. Both condiments are perfect for pairing with a fresh vegetable platter or warm pita.

The highlight of the class will be our two meat dishes. Starting with the gyro meat, a succulent blend of pressed lamb and beef seasoned with onions and herbs perfect for sandwiches and salads. Next, we’re grilling Chicken Shawarma Skewers marinated in tangy herbs. Chef Melissa will show you a simple and effective way to bake these traditional street food style meats in your own kitchen.

And no Mediterranean feast would be complete without a sweet finale, and we've got you covered with light and crispy Baklava Cups. These bite-sized phyllo pastry cups are filled with a delicious blend of honey, nuts, and aromatic spices. These cups are designed to be less work than a full traditional style baklava, and something you can easily do at home. You’ll take the recipes and inspiration to cook these great Mediterranean dishes in your own home.

• Please enjoy a 10% discount on all items in our retail store during the full calendar day/night of your class or event. Our retail store will be open for browsing prior to class, during any breaks, and after class. 
• We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
