Class Description
Tonight we invite you to join Executive Chef Richard McPeake for a journey through Bourbon Street's exquisite culinary culture. Tonight's menu is a Cajun and Creole focused adventure. Your guide is longtime instructor Chef Richard McPeake. Chef Richard is the Retired Lead Chef Instructor of Kansas City Kansas Community College Culinary Center Chef Instructor for 20 years and a graduate of the Culinary Institute of America. He has won countless awards throughout his career including 14 Travel Holiday Awards and 2 Four Diamond Awards for Food Excellence.
Along with learning how to make our selected New Orleans themed dishes, Chef Richard is going to go in depth on a variety of cooking methods used for these recipes. This includes how to make the famous dark roux in gumbo and how to simmer and infuse rice. Once you nail down these steps your gumbo-making skills will be at pro-level! We are starting with a Chicken and Sausage Gumbo- a staple of any New Orleans themed meal. You're even learning to make your own stock! Next we have Corn a l’Acadien, a cajun corn sausage saute of peppers, onions, andouille sausage mixed with Richard's own Creole seasoning mix.
Next up, we are doing a Cajun mixed grill of blackened beef medallions and seared blackened salmon. Chef Richard will teach you the secrets behind the proper blackened cooking method. We couldn't host a New Orleans style cooking class without ending on a sweet note- tonight's dessert is Flambe Bananas Foster. This is an absolute crowd pleaser and a sight to behold when the rum ignites.

- Please enjoy a 10% discount on all items in our retail store during the full calendar day/night of your class or event. Our retail store will be open for browsing prior to class, during any breaks, and after class.
- We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
- This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Please let us know if you plan to bring a minor.
- If (a) you’d like to sit with another registered guest, or (b) have any food allergies or dietary restrictions, please let us know in the Comments section of your registration after reading our full description of policies and information about classes. If you've registered with other people on the same order, you will automatically be seated together.
