Class Description:
What’s durable, super-affordable, and will last a lifetime? That’s right – cast iron. It may be old-fashioned and remind you of Grandma’s kitchen, but when it comes to cookware, the cast iron skillet isn’t going anywhere. And when it comes to teaching you the art of cast iron cooking, there’s nobody better suited than one of our most popular instructors, Executive Chef Richard McPeake. This class has a distinct Louisiana style to it because Chef Richard has designed and opened restaurants focused on Southern cuisine throughout his storied career. You’ll start your journey with French Quarter Fried Oyster Po Boy Sliders with Remoulade Sauce, then use a cast iron skillet to Pan-Seared Spiced Coubion (pronounced COO-bee-YON), a roux-based creole tomato sauce with shrimp. Cajuns lovingly call this delicious dish "Swamp People Stew." Next, you’ll have Corn a l’Acadien (Moque Choux), a Cajun corn sausage sauté. Dessert? Cast Iron Spiced Peach Cobbler! You'll learn how cast iron cookware – highly valued for its cooking properties because it evenly distributes and holds heat – is great for deep-frying, searing and even baking, Plus it can go from the stovetop into an oven or even onto the grill! What other cooking vessel can make those claims? And did you know there’s a right and wrong way of cleaning and caring for your cookware? When seasoned correctly, your cast iron cookware will last a lifetime. After this informative class, you won't know how you lived without a cast iron skillet in your own kitchen.
