Class Description:
Fruit tarts are the epitome of elegant French patisserie. In this hands-on class, you'll learn the foundational techniques for creating a show stopping fruit tart from scratch, from the buttery short dough crust to the silky pastry cream and vibrant fresh fruit topping. Your guide is Executive Pastry Chef Catie Wiley, who joins us after a distinguished career as a pastry chef at several iconic patisseries and restaurants on the East Coast. We'll begin by mastering a classic French short dough - a rich, crumbly crust made with butter, flour, sugar and eggs. You'll learn the proper methods for mixing, rolling and blind baking the shells to achieve a crisp, evenly-baked foundation. While the shells cool, you'll prepare a luxurious pastry cream filling - a stovetop custard made with eggs, milk, sugar, and a hint of vanilla. Once chilled, this lush cream is spread into the tart shells, creating a contrasting combination of textures.
Then comes the artistic element - arranging seasonal fresh fruit atop the tarts. You'll gain expert tips on selecting and prepping, as well as knife skills for slicing fruits like kiwi, mango, berries and citrus into a colorful mosaic. To add an elegant finish, you'll learn how to brush the fruit with a glossy apricot glaze that adds a delightful shine and light sweetness. By the end of the class, you'll have a showpiece fruit tart to take home, along with recipes and skills to keep baking these beauties. With some practice, you'll be creating pastry shop-worthy fruit tarts for all your Spring and Summer gatherings!

- We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
- This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Please let us know if you plan to bring a minor.
