The class begins with a 2-hour field trip led by Scott Moran, where you'll explore a local foraging site. Learn about the diverse array of edible greens and mushrooms that grow in your surroundings as Scott shares his wealth of knowledge and expertise. Discover the secrets of sustainable foraging and gain insights into the fascinating world of wild edibles.
After the foraging excursion, we will reconvene at Lakehouse Kitchens for a demonstration lunch that showcases the incredible flavours of foraged ingredients. Chef Bernard and Scott will collaborate to create a delectable menu, featuring a combination of foraged greens and mushrooms.
During the demonstration lunch, you'll have the opportunity to engage in further discussions about foraging, learn how to use dehydrated greens and mushrooms in everyday cooking, and discover the unique flavors and techniques associated with wild edibles. Expand your culinary repertoire and gain a deeper appreciation for the bounty of nature.
As a special bonus, you'll have the chance to purchase foraged products directly from Scott at the end of the class, allowing you to continue exploring the flavours of the wild in your own kitchen.
Additionally, you'll take home your own foraged product, providing a tangible memento of your foraging adventure.
**NOTE**
- Foraging location will be scouted by Scott closer to the day of the class and participants will receive notification of the destination the day before class via email.
- Participants are responsible for their own transportation to and from the foraging location.
