Class Description:
Light up date night this summer with our couples' grilling class featuring vibrant Italian flavors! This hands-on cooking experience will have you and your partner working together to create an incredible four-course meal on the grill. Your guide is Executive Chef Richard McPeake, an award-winning Chef and BBQ Pitmaster with over forty years of experience. 
 
The words “Italian” and “grilling” go together like the verse and refrain of a love song. The Italian grill is all nuance and minimal interference with the flavor of the primary ingredient. There are no sweet barbecue sauces, no sweet and sour glaze. Marinades and natural flavors are important, but they are lighter. There is rarely anything more to them than good olive oil, citrus, wine, fresh herbs, garlic, and some aged balsamic vinegar. 
We’ll start by learning how to make a unique appetizer - radicchio leaves get wrapped with crisp pancetta and stuffed with sweet pears and a drizzle of thick balsamic vinegar for a flavor explosion. Then, master the art of grilling as we guide you step-by-step through firing up succulent shrimp saltimbocca. These plump shrimp are wrapped in prosciutto and fresh sage, grilled, and drizzled with a white wine butter sauce. Next we’ll spice things up with Chicken alla Fra Diavolo - juicy chicken breast rubbed with Italian spices and grilled over roaring flames, then topped with a robust tomato sauce kicked up with garlic, crushed red pepper, and white wine.
 
On the side, you’ll enjoy Corn on the Cob slathered with flavorful Italian herb butter before getting delightfully charred over the open flames. Finish your meal with a sweet twist by grilling thick slices of fresh peaches until caramelized and juicy, then topping them with an airy, sweet sabayon sauce made with champagne that you'll prepare yourselves.
