Class Description:
Learn how to smoke in a day! In this 6-hour class, you’ll work alongside Executive Chef Richard McPeake and BBQ Pitmaster Bruce Campbell in a full-day class with student participation from start to finish. You will bring in your own smoker for the class. Our goal is that each student will go home with complete confidence to cook great barbecue! You’ll receive significant one-on-one instruction from Chef Richard (a 35-year BBQ veteran and 40-year professional chef) and Bruce Campbell (a 25+ year BBQ veteran and restaurant industry professional), with the goal of helping you get the most from your own equipment. It’s all going to be covered today, including the tricks and tips of the trade of BBQ cookery; selecting, trimming, and cutting raw meats, including ribs; working with whole chickens; demos on brisket and pork butt prep; mops; how to make your ribs bone tender; BBQ rubs; and the four flavor stages.
You will also create two of your own signature BBQ rubs! Other areas we will go in-depth include: BBQ styles and regions; smoking wood selection and use; building an efficient fire including fuel choices; controlling your fire and heat; exploding the cooking time myth; and speeding up the cooking process without burning. When the day is done, each student will have made Baby Back Ribs, BBQ Rubbed Whole Chicken, and BBQ Spiced Italian Sausage to take home and show off. We'll end our class with an award ceremony where everyone will be presented with the coveted "Certificate of Smokology®" from Chef Richard and Pitmaster Bruce.

Notes:
- We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
- This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Both people have to pay separate class fees. Please let us know if you plan to bring a minor.

If you've registered with other people on the same order, you will automatically be seated together.
