Class Description
Unleash your inner charcutier in this hands-on sausage making adventure! Join us for a flavorful journey through the art and science of crafting artisanal sausages from scratch. In this immersive class, you'll master the techniques to create five diverse and delicious sausages under the guidance of Matt DeMoss and Josef Wantschik, owners of the Meat Shed. 

Matt is the founder and owner of the Meat Shed and has been making and selling sausage in Pittsburg Kansas for over a decade.  Matt was inspired as a child by the sausage and salami making traditions in Southeast Kansas, Matt is passionate about local farming and preserving the flavors and traditions of his childhood. The son of German immigrants, Josef began making sausage and salami on his grandfather’s farm over 40 years ago and has maintained and grown his family traditions since then.  Joe became a partner in the Meat Shed in 2019 and led their dry cured sausage program, making the Meat Shed the first (and only) facility in the state of Kansas to produce traditional dry cured salami.

Guests will learn the art of traditional sausage making including meat selection, formulating a recipe, grinding, stuffing, and food safety. Guests will work in pairs, and we will assign which teams make which formulation of sausage (this is to ensure all four varieties are made for the participants to take home!) You will go home with a pound of each sausage style.
 
You'll dive into every step of the sausage-making process. Learn the secrets of selecting the perfect casings, mastering the grind, and blending spices for mouthwatering results. We'll cover essential skills including:

• Meat selection and preparation
• Grinding and mixing techniques
• Stuffing and linking methods
• Casing selection and handling
• Crucial food safety and sanitation practices
• Equipment and supply insights
• Cooking methods

By the end of this class, you'll have the confidence to create restaurant-quality sausages in your own kitchen. Best of all, you'll sample several selections of sausages from The Meat Shed Team and other charcuterie small bites throughout the class. Whether you're a culinary novice or a seasoned home cook, this class promises to elevate your skills and expand your repertoire. • Please enjoy a 10% discount on all items in our retail store during the full calendar day/night of your class or event. Our retail store will be open for browsing prior to class, during any breaks, and after class. 
• We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
