Class Description:
Immerse yourself in Old-World bread baking in this hands-on class. You'll learn to create two European rustic loaves from scratch – the airy and chewy Ciabatta from Italy, and the stunning Fougasse, the French cousin to focaccia. Your guide is Pastry Chef Catie Wiley, who joins us after a distinguished career as a pastry chef at several iconic patisseries and restaurants on the East Coast.

We'll begin by preparing an authentic Ciabatta dough using traditional folding and turning techniques, to create its signature irregular holes and crisp crust. As you craft your dough, Chef Catie will review the science behind leavened breads and how to coax out maximum flavor. Next, we take you step-by-step through mixing and shaping the Fougasse dough to create the traditional leaf-like design.

Take your Ciabatta and Fougasse loaves home, along with new skills for baking crusty, artisan breads in your own kitchen. Whether you're an experienced home baker looking to elevate your skills or a complete novice embarking on your bread journey, this class offers hands-on experience in Old World bread crafting traditions.

• We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
• This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Please let us know if you plan to bring a minor.
