This special collaboration brings you up close with the unique terroir of Osoyoos and Oliver. Phantom Creek Estates is known for their outstanding Bordeaux-style blends and Alsatian whites, crafted in certified organic vineyards by winemaking legends Mark Beringer and Olivier Humbrecht MW.

First Course: Chicken Schnitzel, Pickled Fennel, Confit Meyer Lemon
- Side by Side of Riesling (two different vineyard expressions)
Second Course: Classic Tarte Flambee (Alsatian), Potato, Bacon Lardon, Creme Fraiche
Third Course: Bistecca alla Fiorentina, Whipped Chive and Potato, Smoked Shallot and Black Perigold Truffle Sauce

Mark Beringer, the new general manager of Phantom Creek Estates, brings decades of expertise and optimism to the winery, even after a tough winter freeze in the South Okanagan Valley. With a clear vision to prioritize the wine, he’s already planning for the future as director of winemaking, focusing on reds. One exciting project is a GSM blend (Grenache, Syrah, Mourvèdre), with Syrah thriving in the region and Grenache offering versatility for both reds and rosés. These efforts aim to “future-proof” the winery against challenges like extreme weather.
Phantom Creek’s foundation is strong, with three historic, sun-soaked vineyards—Becker, Phantom Creek, and Kobau—and significant investments in its art-filled facility, advanced winemaking technology, and skilled team. Combined with Beringer’s renowned experience from Napa Valley’s Duckhorn and Beringer Vineyards, the winery is well-positioned for a bright and exciting future.
