Summer Camp Series: Professional Baking (Beginners)

Cost: $295 per camper (includes all 5 days)
During this series, students will get a week of basic professional baking classes. They will learn the basics of safety and sanitation, including basic SERVSAFE information. They will learn food math, including stem basics. They will learn techniques and get a hands on experience to creating high-end professional pastries in a professional, licensed kitchen by an award winning chef. Classes are limited to 6 students, so they will receive personal instruction. A simple lunch is provided.
Day 1: Mise en Place
During this session, we will focus on food safety (this will be the foundation for the ServSafe course), measuring, weighing, basic pastry food equipment use, food math. We will be baking several different types of cookies. Students will take home several dozen cookies and will have learned basic kitchen safety and sanitation.
Day 2: Breakfast Items
During this week, students will learn the difference between different types of yeast doughs and the techniques for providing breakfast items including:Doughnuts, quiche and croissants
Day 3: European Specialties
During this session, students will participate in a discussion of European style pastries and will get to sample, take home and create some of the following: Tiramisu, Eclairs, fresh fruit tart, Macarons
Day 4: Cake Decorating
During this session, each student will chose a cake flavor (choice of butter or chocolate), learn how to make a basic buttercream, and decorate a cake. They will learn basic techniques with piping bags. They will have two choices of designs to chose from: one will be a seashell/nautical/beach themed cake with mermaid tail, or edible chocolate shells. The other choice will be decorated flower cake.
Day 5: Quick Breads
During this session, each student will be responsible for making a pound cake, and helping with scones and muffins.
Includes the choice of: Lemon blueberry pound cake, pumpkin pound cake, banana bread, raspberry scones, blueberry or cappucino muffins
