Class Description:
Embark on a journey into the heart of artisanal baking with our Sourdough Bread-Making 101 class, led by experienced instructor Gretchen Harrison. If the idea of creating your own heavenly, tangy sourdough bread from scratch excites you, then this is the class for you. Under Gretchen's expert guidance, you'll delve into the fascinating world of sourdough, learning proven and successful processes to cultivate and nurture your own sourdough starter and create beautiful breads and baked goods. This sourdough, a French in the Ken Forkish model, will yield a delicate sourdough taste with the coveted crisp crust that sets sourdough apart from all other bread. You’ll also learn about tempting ways to use sourdough discard (the portion of the sourdough starter that is removed) in creative recipes like cheese crackers, pancakes, and muffins. Discover the magic behind the pre-fermentation process, including the and biga techniques, to infuse your bread with a creamy, slightly nutty character. Hands-on and dough-deep, this class will guide you through the art of proofing and shaping your dough to perfection. Plus you will take home your own ready-to-proof demi-loaf that will be ready for your oven in a mere 12-14 hours! Whether you're a baking novice or a seasoned pro, Sourdough Bread-Making 101 will allow you to take your skills to the next level. Note: If you live more than a 30-minute drive from The Culinary Center, bring a small cooler with you to carry your dough home so that it doesn’t over-ferment.
