This is a continuation of our How to Cook Fish class, although that class is not a pre-requesite. This fish class focuses on some of the lesser-known fish varieties (although still easy to find at the market) and the cooking techniques that best highlight their flavor. 

  • Whole Roasted Fish with Vegetables
  • Vietnamese Caramel-Braised Mackerel (or bluefish, in season)
  • Squid Two Way (quick- and long-cooked):  Warm Squid Salad with Capers and Lemon + Baked Squid with Parslied Potatoes
  • Perfect Crisp-Skinned Snapper Fillets (NOT in a non-stick pan!)
