In this 1.5 hour class, you will learn how to make curds, custards, and creams with and to accompany the fresh berries currently in season.
All berries will be fresh from Chocolates and Tomatoes Farm where we use no chemicals in growing our plants. (We grow strawberries, blueberries, blackberries, and raspberries -- nature has its own rhythm so it is hard to say exactly which ones will be in season at class time although usually in early June, strawberries and blueberries; late June, blueberries and raspberries; in July blueberries and blackberries)
- Chef Mark will describe how we grow berry plants here and why he selected these varieties for Chocolates and Tomatoes Farm.
- As he demonstrates 3-4 recipes, he will provide you with ingredients and materials lists, show you techniques for maximizing creaminess and flavor.
- You will get to taste the raw berries and the demonstration recipes.
- You will get to participate in some recipe preparation, take home 3-4 recipes, and samples from the class demonstrations.
No cooking or baking experience necessary.
Classes are designed for adults. Teens and tweens may attend with a supportive, registered adult.
We will have hot coffee and tea, and cold water available. Feel free to bring nonalcoholic beverages with you.
