In this 2.5 hour class, you will learn how to make eclairs and cream puffs.
Chef Mark will
- Give some history on the origins of éclairs and cream puffs
- Demonstrate how to make the pastry dough (pâte à choux), pastry cream and diplomat cream fillings, and 1-2 types of toppings
- Demonstrate how to shape, cook, fill, and ice the éclairs and cream puffs

In this 2.5 hour class, you will learn how to make eclairs and cream puffs.

- Demonstrate how to shape, cook, fill, and ice the éclairs and cream puffs
Participants will
- Participate in making some components
- Pipe out, fill, and top six éclairs
- Take home the 3-4 recipes used in class for the dough, fillings, and toppings
- Take home the six éclairs that you made in class
No cooking experience necessary.
We will have hot coffee and tea, and cold water available, Feel free to bring nonalcoholic beverages with you.
