In this 3.5 hour class that you take over 2 sessions, you will learn how to and make a petite gateau (small mouse cake). Your petite gateau can serve up to 4 people, and you can take it home and serve it right away session 2, or freeze it for up to one month to serve it later.
- Day 1: In this 2-hour session, you will learn about your petite gateau and entremet desserts in general.
- Learn how to and make the components: the mousse layer, the base, and the mirror glaze.
- Learn how to and assemble the mousse and base components.
- You can choose 1 of 2 flavors for your inner mousse insert pre-made by Chef Mark.
- Your petite gateau in-the-making will stay at the Learning Kitchen at Chocolates and Tomatoes Farm as it has to freeze before the next steps can be completed.
- Day 2: In this 1.5 hour session, learn how to and unmold the mousse and to decorate your petite gateau.
- Learn how to and unmold the mousse
- Learn how to and glaze the mousse with the mirror glaze you made
- Learn how to make decorations and decorate your petite gateau
- Learn what to consider in making plated desserts like these
- Try out the version that Chef Mark makes so you can see what the layers look like inside, and save yours to take home to share with friends.
- Take home what you make at the end of session 2, plus the recipes to do it again yourself.
No cooking experience necessary (Level 1 class).
