Class Description
Get ready to take your pizza game to the next level! In this hands-on class, you'll learn how to make an authentic overnight pizza dough from scratch and prepare a classic marinara sauce. You'll also master techniques for shaping and stuffing New York-style calzones with ricotta filling. Your guide is Pastry Chef Catie Wiley, who joins us after a distinguished career as a pastry chef at several iconic patisseries and restaurants on the East Coast.
We'll begin by combining simple ingredients like flour, yeast, water and salt to form the elastic pizza dough. As you learn the proper kneading methods, the dough will transform into a smooth, supple base ready for an overnight cold fermentation - a key step for developing maximum flavor. While the dough rests, you'll simmer up a vibrant marinara sauce using aromatic herbs and garlic. This jewel-red sauce will be the star topping for your pizzas and the luscious dip for the calzones. Then it's time to shape and top your pizzas! You'll have an array of toppings to choose from including classic pepperoni, Italian sausage, sliced mushrooms, bell peppers and more. As the pizzas bake, you'll tackle the ricotta calzone filling - a creamy blend of cheeses, Italian herbs and Parmesan. After mastering the folding and stuffing techniques, you'll bake your calzones to golden, crispy perfection. One bite and you'll taste the delicious difference that from-scratch dough and classic fillings make.
By the end of the class, you'll take home pizza dough ready for a second rise, along with your leftover pizza and calzone (if there are any!) and recipes to recreate these Italian classics whenever cravings strike!

- We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
- This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Please let us know if you plan to bring a minor.

If you've registered with other people on the same order, you will automatically be seated together.
