Class Description
Hop across the pond for today’s class with two classic English tea rooms favorites: a rich Shortbread and a soft and airy Sponge Cake. Your guide is Executive Pastry Chef Catie Wiley, who joins us after a distinguished career as a pastry chef at several iconic patisseries and restaurants on the East Coast.

We’re starting the morning off with Millionaire's Shortbread - decadent layers of buttery shortbread, gooey caramel, and glossy chocolate. First you will prepare the Millionaire’s Shortbread base - a simple dough made with butter, flour, and just a touch of sugar. After baking, top it with a layer of indulgent handmade caramel and a smooth glaze of chocolate ganache. Next up: the quintessential Victoria Sponge Cake filled with jam and sweet cream. This light-as-air sponge cake bakes up tall, golden, and soft. Adding to the sweetness is a filling of whipped cream and raspberry jam. Finish your masterpiece with a dusting of powdered sugar and you have a picture-perfect cake worthy of the Queen herself!

By the end of the class, you'll take home slices of both decadent Millionaire's Shortbread and Victoria Sponge Cake. Keep these recipes on hand for casual teas, special celebrations, or anytime you crave an elegant English indulgence.

This class is for adults 18+. Children 14-17 years old are allowed if accompanied by a parent or guardian. Please let us know if you plan to bring a minor.
