Please join Baking Arts for our two day mousse cake entremet class. Students will create a dark chocolate toffee mousse cake on a genoise sponge as well as learn to formulate and use two types of mirror glaze. Fundamentals of mousse preparation and ingredient composition and how they effect the final outcome as well as tips to streamline the processes of mousse and glaze prep will be covered. Students will also learn tips, tricks and techniques for creating a mirror glaze with choice of effects from an elegant one color glaze to marble techniques. Take your cake home with you at the end of the second day. All materials and supplies are provided. This class is limited to only six students and is not meant for beginners. If you bake on a regular basis and are familiar with most types of kitchen/baking equipment and can multi-task in the kitchen, this class is for you.
